A small producer in the Alto Monferrato-area, at about 280 metres, working barely 5 hectares of ground with passion and tenacity, producing a wine that requires patience but guarantees satisfaction. The dolcetto-grape has always been known as an easily drinkable grape, and the ‘Erche’ is an Ovada DOCG Riserva, made exclusively form dolcetto-grapes from the Vicario wine yard, planted between 1996 and 2000, with an average yield of about 50 q/h.

The grapes grow in predominantly clayish and loamy soil, using contour ploughing. They are treated only with copper and sulphur and fertilised with green manure, mostly from different types of legumes. The harvesting is done exclusively by hand. The natural fermentation takes place in old barrels, using only natural levitation, prolonged maceration and no control of temperature. It is then matures for 24 to 30 months or more, in a blend of old wood, mostly in barrel rolls.

Pepper and spices dominate the aroma, while the wine is compact and austere in the glass. Tannins and salts supported by sapidity give it a thrilling taste. The wine is consistent with a noticeable alcohol-content which has nevertheless been well integrated in the main structure, which also has notes of soil and almond tannins.

Abbinamenti

Creamy risotto with parmesan cheese, ragout of wild board and forest fruits.
